We explore the fundamentals of gastronomy. However, “there is no restaurant behind the curtains”. Instead, we are an atelier hosting events with a Chef’s Table in the kitchen seating only ten people & four sets for 2 or 4 persons for an even more private experience.
At Fundamental we investigate the distinctive characteristics of our surrouning landscape zones (Sea, Salt marshes, dunes, rivers, polders and forests), examining different soils, their impact on flavour and how they relate to our ever-changing environment. Gastronomy is more than just food; it encompasses science, mathematics, art and design elements that likewise inspire meaningful conversations at the table.
We are inspired by the rhythm of nature, our local surroundings and culture.
We invite you to spend an evening with us for an immersive experience of our location, a sequence of dishes, and (non)alcoholic pairing, surrounded by contemporary design. Based on our inspirations and exploring the outcomes of our test kitchen in our Atelier.

Hidden in the heart of the season, the Fundamental Atelier returns, evolving, intimate, alive.
This summer, our Atelier reimagines itself as a boutique restaurant, a speakeasy of sorts. Tucked beside the kitchen, the chef’s table offers a direct line to creation. Around it, just four private-private tables crafted, for two, or an intimate four, invite you into a world where the food, the season, and the moment are all that exist.
Because remember, we are not a restaurant.
We are something more fleeting.
No menu. No noise.
Only what the season gives, elevated.
Each dish a fleeting composition.
Each night, never repeated.

NOVEMBER
This November, we present a menu based on what we know and what we have explored in the South of France and Spain. It is not a replication but a reflection of places we have been, the herbs we picked and the people we have met. Seafood from the coast, vegetables from inland soil and wild game treated with patience and fire. Every dish has been reduced to what matters. No nostalgia, no excess. Just flavour, texture, balance and time, carried by the season and finished with intent.
