We explore the fundamentals of gastronomy. However, “there is no restaurant behind the curtains”. Instead, we are an atelier hosting events with a Chef’s Table in the kitchen seating only ten people & three sets for 2 or 4 persons for an even more private experience.

At Fundamental we investigate the distinctive characteristics of our surrounding landscape zones (Sea, Salt marshes, dunes, rivers, polders and forests), examining different soils, their impact on flavour and how they relate to our ever-changing environment. Gastronomy is more than just food; it encompasses science, mathematics, art and design elements that likewise inspire meaningful conversations at the table.

We are inspired by the rhythm of nature, our local surroundings and culture.

We invite you to spend an evening with us for an immersive experience of our location, a sequence of dishes, and (non)alcoholic pairing, surrounded by contemporary design. Based on our inspirations and exploring the outcomes of our test kitchen in our Atelier.

JANUARY & FEBRUARY

Welcome to the polders.
A landscape born of patience, precision and quiet determination.
Where water once dictated life, centuries of human craftsmanship shaped land and purpose.

This evening unfolds as a culinary narrative.
Each course is composed as a chapter:
the purity of the primordial landscape and the perpetual dialogue with water,
the first harvest and the emergence of abundance,
and a final reflection on stewardship, on what we have created and what we choose to preserve.

Our menu is guided by the Dutch season of January and the integrity of local ingredients.
Yet beyond taste, it reveals something deeper:
layers of time, restraint, collaboration and respect for place.

This is cuisine as memory and landscape,
a dining experience that speaks softly.

SEA/(SALT)MARSHES

A five-course progression following water as it shifts inland.
From open sea to tidal edge, through salt marshes and wetlands, the menu traces early spring in motion.

Flavours are restrained and precise: saline, green and barely emerged.
Each course captures a moment of transition: erosion, emergence, saturation and retreat.

A menu defined by movement, tension, and the first signs of renewal.
